Soft no-bake pecan pie bars with a spiced crust, smooth salted caramel and a generous layer of pecans.
Ingredients
Pecan pie crust
- 1 cup rolled oats
- 1 cup pecans
- ½ cup blanched almond flour
- 1 tbsp ground cinnamon
- ¼ tsp salt
- 7–8 large Medjool dates, pitted
- 1–2 tbsp water, only as needed
Salted caramel
- 20 large Medjool dates, pitted
- ¼ cup water
- ½ tsp vanilla extract
- ¼ tsp salt
Topping
- 1 cup crushed pecans

Prepare the crust
Combine the rolled oats, pecans, almond flour, cinnamon and salt in a food processor. Process until a crumbly, flour-like mixture forms. Add the Medjool dates and process again until the mixture becomes sticky and crumbly. Add a little water only if needed, until the dough holds together when pinched.

Press the crust
Transfer the mixture to the RaisingBars mold and press it firmly into an even layer across the base.

Prepare the salted caramel
Combine the Medjool dates, water, vanilla and salt in the food processor. Process until a smooth, caramel-like consistency forms, scraping down the sides between pulses as needed.

Add the caramel and pecans
Spread the caramel evenly over the crust. Sprinkle the crushed pecans on top and gently press them into the caramel.

Chill and serve
Chill the mold in the freezer for at least 30 minutes. Remove the bars from the mold and enjoy.
